This coleslaw is a great way to get your daily dose of vegetables. It's also very versatile - you can add other vegetables, fruits, or nuts to taste. I like to add a handful of chopped broccoli florets for a bit of extra crunch.

I was pleasantly surprised by how much I enjoyed this coleslaw. It's a healthier alternative to traditional coleslaw, but it's still just as delicious. I'll definitely be making this again.

I've been looking for a healthier coleslaw recipe, and this one fits the bill perfectly. It's low in calories and fat, but it's still packed with flavor. I especially love the addition of the pineapple, which gives it a tropical twist.
