A different twist to Deviled Eggs image

This is an easy appetizer good for any occasion. There are many different ways to do Deviled Eggs but this one happens to be a personal favorite!

12 eggs hard boiled
4 Tbsp cottage cheese
3 Tbsp ranch dressing
2 Tbsp regular or dijon mustard
2 Tbsp chives or dill weed
4 Tbsp sweet relish
paprika

Steps:

  • 1. Boil the eggs in a saucepan with enough water to cover the eggs. Boil for 15 minutes; drain and let the eggs cool in cold water. ( I usually put them in the freezer for 15 minutes ) Remove and discard the egg shells.
  • 2. Slice eggs lengthwise in half. Remove egg yolk reserving 4 yolks. Discard remaining yolks or use them for something else. Place egg whites cut sides up on a serving platter.
  • 3. In a medium bowl combine cottage cheese, ranch dressing, mustard, relish and the 4 egg yolks. Smash and mix with a fork until smooth. Stir in chives. Spoon the mixture into each egg white. Cover and chill 1 hour.
  • 4. Remove eggs before serving and sprinkle with Paprika.

I've been making deviled eggs for years, but I'd never thought to add bacon and chives before. What a great idea! The bacon added a nice smoky flavor and the chives gave them a bright, fresh taste. I'll definitely be making these again.
