Categories     Potatoes

Time 55m

Number Of Ingredients 8

6 medium potatoes
2-3 clove garlic, sliced
2 Tbsp olive oil
2 Tbsp butter
salt and pepper to taste
OPTIONAL:
6 oz cheddar cheese, shredded
2 Tbsp green onion, chopped

Steps:

  • 1. Scrub potatoes but do not peel. Cut a small slice off the bottom (lengthwise) of each potato so it will stand and won't roll.
  • 2. With a sharp knife, carefully slice the potato all the way across in thin slices, being careful not to cut all the way through the bottom. Fan the potato out with your fingers without breaking it.
  • 3. Insert one slice of the garlic cloves between every second or third potato slice.
  • 4. Break the butter up into very small pieces and scatter across the tops of potatoes. Season the potatoes with salt and pepper and drizzle with the olive oil.
  • 5. Bake in a preheated 425-degree oven for about 40 minutes or until done. In the last five minutes of baking time, sprinkle about 1 ounce of cheese over each potato and add the green onion, if desired.

These potatoes were a bit too crispy for my liking, but my husband loved them.

I didn't have any garlic butter on hand, so I just used regular butter. The potatoes were still good, but I think they would have been even better with garlic butter.

These potatoes were a little bit too oily for my taste, but they were still good.

These accordion potatoes were a hit at our dinner party. They were crispy on the outside, fluffy on the inside, and the garlic butter added the perfect amount of flavor.
