Ambrosia Waldorf Salad image

My mother loved this salad. It's not mine, I got it from Taste Of Home magazine. But we have made it so many times, it feels like mine. My mom has recently passed away, so when I make this salad, I think of her.

Number Of Ingredients 9

2 c fresh or frozen cranberry halves
1 c sugar
3 c miniature marshmallows
2 c diced unpeeled apples
1 c seedless green grape halves
3/4 c chopped pecans
1 can(s) (20 ounces) pineapple tidbits, drained
1 c heavy whipping cream, whipped
shredded or flaked coconut

Steps:

  • 1. In a small bowl, combine cranberries and sugar. In a large bowl, combine the marshmallows, apples, grapes, pecans and pineapple. Add cranberries and mix well. Fold in whipped cream. Cover and refrigerate. Sprinkle with coconut before serving.
  • 2. Nutritional Facts 1 serving (3/4 cup) equals 175 calories, 8 g fat (2 g saturated fat), 12 mg cholesterol, 10 mg sodium, 27 g carbohydrate, 2 g fiber, 1 g protein.
