Andouille, Mushroom, and Lentil Soup image

Just threw it together one evening and it was a smokey delight. Has great flavor and is even better the next day. Has a split pea-like soup texture, and the andouille gives it a nice little kick. You can use kielbasa instead if andouille is too spicy. Or, for a little less heat, use chorizo.

I love the addition of mushrooms to this soup. They add a depth of flavor that you don't get from just sausage and lentils.

I wasn't sure how the lentils would taste in this soup, but I was pleasantly surprised. They added a nice texture and heartiness to the dish.

The soup was delicious, but I found it to be a bit too spicy for my taste. Next time, I'll use less andouille sausage.
