Andy's Fairfield Granola image

Yet another from Nigella Lawson's Feast cookbook (awesome book!). This is a recipe from a little deli in Fairfield Connecticut called The Pantry. Nigella notes that she makes a chocolate peanut butter version by using 2 cups raw peanuts in place of the almonds and adding 1/4 cup good quality cocoa powder along with the oats and omitting the raisins.

4 1/2 cups rolled oats
1 cup sunflower seeds
3/4 cup sesame seeds
3/4 cup applesauce
2 teaspoons cinnamon
1 teaspoon ginger
1/3 cup rice malt syrup or 1/3 cup golden syrup
1/4 cup honey
3/4 cup light brown sugar
2 cups whole almonds
1 teaspoon sea salt
2 tablespoons sunflower oil
2 cups raisins

Steps:

  • Preheat oven to 300 degrees.
  • Mix everything (except the raisins) together.
  • Spread on baking sheets and bake for 40-60 minutes (till evenly golden, after one turning).
  • Cool and add raisins.
