Apple, Brie & Arugula Grilled Cheese image

Number Of Ingredients 9

1/4 cup Blue cheese
1/4 cup Walnuts
1/4 cup Honey
1 tablespoon Sriracha hot sauce
4 slices Sourdough bread
4 ounces Brie, rind removed
1 Green apple, cored and thinly sliced
1/2 cup Arugula, roughly chopped, divided
4 tablespoons Butter, divided

Steps:

  • 1. In a blender or food processor, combine the blue cheese, walnuts, honey and hot sauce until smooth.
  • 2. Spread Brie on 2 slices of bread and top evenly with apple slices and arugula. Spread the blue cheese mixture on remaining slices and close the sandwich.
  • 3. Heat a nonstick skillet or griddle over medium heat. Melt 2 tablespoons butter in the pan and cook sandwiches until golden brown, pressing down gently with a spatula. Add remaining butter to pan and carefully flip sandwiches, cooking until cheese has completely melted, about 5 minutes. Transfer sandwiches to a cutting board; let rest for 1 minute before serving.
