Apple Pork Loin image

This pork loin recipe has simple ingredients and the results are super tasty. We really liked this dish in the Test Kitchen. The combination of sweet apples and onions is fantastic. 4 lb pork loin, boneless
8-10 apples, peeled and sliced
2-3 large onions, sliced
1-2 Tbsp butter
1/3 c water
salt and pepper

Steps:

  • 1. Preheat oven to 350.
  • 2. Score the pork and place in roasting pan.
  • 3. Add a tablespoon or 2 of oil) brown well on all sides (about 3 mins a side I think).
  • 4. Remove pork from pan and discard any residual oil/fat. Add butter, return pork to pan. Add apples, onions, and water.
  • 5. Cover and bake 2 hours minimum.
  • 6. Then uncover and bake for another 1/2 hour (add a bit of water if too dry; about 1/4 cup). Graciously salt and pepper (about 1 teaspoon of each).
  • 7. Serve with buttered band noodles or egg noodles. Enjoy!
