Apple Preserves With Cardamom image

This apple compote with cardamom is a welcome addition to the Rosh Hashana table. Some Iraqi Jews substitute rose water for the cardamom. After the prayer over the new fruit of the year, they eat a symbolic spoonful of the sweet preserves.

I'm not sure what went wrong, but my preserves turned out too runny. I think I might have cooked them for too short a time.

These preserves are a bit too sweet for my taste. I think I'll try reducing the amount of sugar next time.

These preserves are a great way to use up extra apples. I had a bunch of windfall apples that I didn't know what to do with, so I made these preserves and they turned out great!

I was pleasantly surprised by how easy these preserves were to make. I'm not a very experienced canner, but I had no problems following the recipe.

These apple preserves are a delightful treat! The cardamom adds a unique and flavorful twist to the classic apple flavor. I love spreading them on toast or crackers, or using them as a filling for pies and tarts.
