ARTICHOKE FRITTATA image

Number Of Ingredients 10

18 oz drained chopped artichoke hearts
2 small yellow onions, finally chopped
2 garlic cloves, finally chopped
6 eggs
1/3 cup bread crumbs
¾ teaspoon salt, pepper, oregano
Dash or two of hot sauce
3 cups grated sharp cheddar cheese
7 tablespoons chopped parsley
2 tablespoons of butter

Steps:

  • Sauté onion until clear, add garlic and sauté another 3 mins. Let cool. Mix together artichokes, eggs, seasonings, and hot sauce. Add onion mixture and mix together. Add breadcrumbs. Add cheddar cheese and chopped parsley. Pour into a 9x11 buttered Pyrex dish and bake at 325 degrees for about 30 mins or until lightly browned. Let cool, cut up and refrigerate. Can be made a day in advance of serving.
