I found the dressing to be a little too bland. I added a tablespoon of lemon juice and a teaspoon of Dijon mustard, and that really improved the flavor.

This recipe is a great way to use up leftover rice. I also like to add a handful of chopped walnuts or pecans for a little extra crunch.

This salad is so easy to make and it's always a crowd-pleaser. I love the bright flavors of the artichoke hearts and shrimp, and the rice adds a nice heartiness. I usually make a double batch because it never lasts long.

I tried this recipe last night for a dinner party and it was a hit! The combination of artichoke hearts, shrimp, and rice is delicious, and the dressing is a perfect balance of tangy and creamy. I will definitely be making this again.
