ARUGULA-STUFFED TOMATOES image

4 vine ripe tomatoes, tops
trimmed and seeded
extra virgin olive oil
salt and pepper to taste
STUFFING
1/2 cup bread crumbs
1/2 cup grated Parmigiano
Reggiano cheese
1/2 tea. crushed red pepper
1 clove garlic chopped
2 cups arugula leaves
1 tbs. olive oil

Steps:

  • Arrange tomatoes on a broiler, drizzle with oil, season with salt and pepper. Combine bread crumbs, cheese, red pepper flakes, garlic, arugula and oil and pulse in food processor to make stuffing. Stuff tomatoes, place in center rack of oven. Bake 10-12 min. at 400*.
