1 c basmati rice
2 c water
1/2 tsp salt
2 tsp canola oil
2 Tbsp butter
1 bunch fresh asparagus, broken and cut into bite size pieces.
2 Tbsp lime or lemon juice
salt and pepper to taste

  • 1. In a microwaveable covered dish combine the rice, oil, salt, and water. Microwave on high for 10-12 minutes. Fluff up rice after cooking 6 minutes. Fluff up again at the end of the cooking time. Taste test rice, it should be "just under done". Not mushy.

I've made this dish with different types of rice and it's always delicious. Basmati rice is my favorite, but brown rice or wild rice would also be good.
