Au Gratin Sausage Skillet image

This is a Gooseberry Patch recipe;submitted by Teresa Podracky. It is a quick weeknight supper that takes less than 25 minutes to get from stove to table. I have changed it from oil to coconut oil and from regular cheddar to light cheddar cheese to make it diet friendly.

I'm not a big fan of sausage, but I really enjoyed this dish. The cheese and potatoes were cooked perfectly.

I followed the recipe exactly, but my dish didn't turn out as good as the picture. I'm not sure what I did wrong.

I followed the recipe exactly, and the dish turned out great. The only thing I would change next time is to add a little more spice.
