Aunt Evelyn's Broccoli Casserole image

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Aunt Evelyn.

Number Of Ingredients 8

1/2 c chopped onion
1/2 c chopped celery
1/4 c butter, melted
1 can(s) cream of mushroom soup
1 pkg (10 oz) frozen broccoli
1 c boiling water
1 1/2 c minute rice (use as is, not prepared)
velveeta cheese (most of a small package)

Steps:

  • 1. Mix all ingredients together. Put in casserole dish
  • 2. Bake 45 minutes at 350°F.

This casserole was delicious! The broccoli was cooked perfectly and the cheese sauce was creamy and flavorful. I especially liked the crispy Ritz cracker topping. I will definitely be making this again.
