AUNT PAM'S GRILLED SALMON W/ PINEAPPLE SALSA image

Number Of Ingredients 11

1 1/2 c. chopped fresh pineapple
1/4 c. chopped red onion
3 Tbls. freshly squeezed lemon juice
1/2 - 1 tsp. chopped jalapeno pepper
1 tsp. grated fresh ginger root
1 Tbls. chopped fresh mint
6 Tbls. butter
1/3 c. honey
1/3 c. brown sugar
Bottled hot sauce
6 salmon filets

Steps:

  • 1. Combine pineapple, red onion, ginger, mint and 1 tablespoon lemon juice. Add jalapeno pepper to taste. Mix well and refrigerate for at least 4 hours. 2. In a small saucepan, melt butter, then add the honey, brown sugar, remaining 2 tablespoons lemon juice, and hot sauce to taste. Heat over low heat until sugar melts. Set aside to cool. 3. Place salmon in plastic bag. Add marinade. Remove as much air as possible from plastic bag and seal. Marinate salmon for 30 minutes. 4. Grill or broil salmon 2 - 3 minutes on each side to desired doneness. Serve along with pinapple salsa.
