Steps:
- Heat 1 tablespoon olive oil in skillet- add red bell pepper, onion, and garlic. Saute until soft. Remove from skillet and cool.
- Add all your ingredients in a bowl and mix. Do not over mix.
- Place mixture in meatloaf pan (or pie dish) and cover with the marinara sauce.
- Bake at 350 degrees for 50-60 minutes.
- Let stand 10 minutes before serving.
