This was a fabulous salad adapted from a recipe from last month's (Oct 2004) issue of Cooking Light. Their recipe called for blue cheese, but I've also used an herbed feta cheese.

This salad is a great way to use up leftover apples. I had some Granny Smith apples that were starting to get a little soft, so I decided to make this salad. It turned out great! The apples were still tart and crisp, and the dressing was delicious.

I'm not a big fan of goat cheese, but I really liked it in this salad. It added a creamy richness that balanced out the tartness of the apples.
