Avocado and Mushroom Salad image

Number Of Ingredients 6

2 tablespoons red wine vinegar
3 tablespoons light olive oil
1/4 teaspoon ground cumin
Salt and freshly ground black pepper to taste
8 medium mushrooms
1 ripe, medium avocado

Steps:

  • Beat vinegar with oil, cumin, salt and pepper.
  • Rinse mushrooms; trim off stem ends and slice mushrooms. Cube avocado.
  • Divide mushrooms and avocado between two plates. Whisk dressing over salads.
