Baja Bites image

Number Of Ingredients 8

5 eggs, beaten
1 cup cottage cheese
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 cup butter, melted
2 tablespoons green onion, minced
1 (4-ounce) can diced green chiles, drained
1 (8-ounce) package shredded Monterey Jack cheese

Steps:

  • Combine eggs and cottage cheese; mix until almost smooth. Add flour, baking powder and butter; stir in onion, chiles and cheese. Pour into a lightly greased 8"x8" baking pan. Bake at 350 degrees for 30 to 40 minutes. Cool slightly; cut into squares.
