Time 45m

Yield 6 servings

Number Of Ingredients 4

6 fennel bulbs, preferably small, about 1 1/2 pounds total weight
Salt to taste, if desired
Freshly ground pepper to taste
1/2 cup olive oil

Steps:

  • To prepare the fennel, cut off the upper stems close to the bulb and trim off the bottoms. If small bulbs are available, cut each trimmed bulb in half lengthwise. If small bulbs are not available, cut each lengthwise into quarters.
  • As the fennel bulbs are trimmed and cut, drop them into a basin of cold water.
  • Bring a large quantity of water to the boil in a saucepan and add salt to taste.
  • Drain the fennel and add the pieces to the boiling water.
  • Preheat the oven to 400 degrees.
  • Let the fennnel cook about 10 minutes, until almost tender. Drain. Pat dry, using a clean linen towel or paper toweling. If the centers of each piece of fennel are tough or woody, carefully trim away and discard the tough part.
  • Arrange the fennel pieces in one layer in a baking dish, cut-side down. Sprinkle with salt and pepper and the olive oil.
  • Place the dish in the oven and bake 20 minutes.

I've made this recipe several times and it's always a crowd-pleaser. The fennel is always tender and flavorful, and the roasting process gives it a nice caramelized exterior.

I'm not sure what went wrong, but my fennel turned out dry and tough. I think I might have roasted it for too long.

This recipe was a bit too simple for my taste. I think it could have benefited from a more flavorful marinade or a more complex roasting technique.

This recipe was a great starting point, but I made a few changes to suit my taste. I added a bit of garlic and paprika, and I roasted the fennel for a few minutes longer. The result was a delicious and flavorful dish.

Overall, this was a good recipe. The fennel was roasted nicely and had a good flavor. However, I think it would have been better if I had used fresh fennel instead of frozen.

The fennel was a bit too hard for my liking. I think I'll try roasting it for a shorter amount of time next time.

This recipe was a bit bland for my taste. I think it could have used some additional seasoning or a flavorful sauce.
