Baked Frittata image

After a long night crossing The Sea of Cortez I came up with this version of a frittata. Mix together and pop in the oven, what could be easier! Bacon or ham could be substituted for the sausage.

I'm not sure what I did wrong, but my frittata didn't turn out very well. It was too dry and crumbly.

The frittata was a bit too oily for my taste. I think I would use less olive oil next time.

This frittata was a little bland for my taste. I think I would add some more herbs and spices next time.

I'm not a big fan of eggs, but I really enjoyed this frittata. The vegetables and cheese helped to balance out the flavor of the eggs. I would definitely make this again.

I've made this frittata several times now and it's always a crowd-pleaser. It's a great way to use up leftover vegetables and it's also a very forgiving recipe. I've even added cooked bacon or sausage to it and it's always turned out great.
