BAKED GARLIC CHEESE GRITS image

My very favorite comfort food! Discovered this several years ago on the back of the grits box and I knew I would love it. Nobody eats it except me, so I either pig out or have many leftovers.

4 c water
1 1/4 tsp salt
1 c uncooked quick-cooking grits
8 oz extra sharp cheddar cheese, shredded and separated
1 Tbsp butter
3/4 c milk
2 clove garlic, minced
2 large eggs
cooking spray, butter flavor

Steps:

  • 1. Bring water and salt to a boil in a medium saucepan. Gradually add grits, stirring constantly. Cover and simmer 8 minutes or until thick, stirring frequently.
  • 2. Remove pan from heat. Add the butter and 6 oz. of the cheese, stirring until cheese melts. Combine milk, garlic and eggs, stirring with a whisk. Stir milk mixture into grits mixture. Pour into a greased or sprayed 2-qt. casserole dish.
  • 3. Bake in a preheated 350-degree oven, covered, for 45-50 minutes. Uncover and sprinkle remaining cheese on top; bake an additional 10 minutes, or until cheese is melted and golden brown.
