2 lbs. boneless, skinless chicken thighs
1/4 tsp. organic sea salt
1/4 tsp. freshly ground black pepper
2 Tbsp. extra virgin olive oil
3/4 cup balsamic vinegar
1 tsp. minced fresh thyme
1 bay leaf
1/2 cp chicken stock

Remove chicken to a plate and sauté onions until deeply bronzed. Deglaze pan with 1/4 cup balsamic vinegar. Stir in minced thyme, ground pepper, bay leaf, remaining 1/2 cup balsamic vinegar, chicken stock and honey. Bring to a boil and add thighs back to pan. This dish was a bit too salty for my taste. I would reduce the amount of salt next time.

I'm not a fan of balsamic vinegar, but I tried this recipe and was pleasantly surprised. The sauce was delicious and I didn't even notice the balsamic vinegar.

This recipe is a bit time-consuming, but it's worth it. The chicken was fall-off-the-bone tender and the sauce was incredible.

The chicken was a bit dry, but the sauce was delicious. I would try this recipe again, but I would cook the chicken for a shorter amount of time.
