1/2 cup butter or 1/2 cup margarine, softened
1/2 cup sugar
2 eggs
1 cup mashed ripe banana
1 apple, peeled and chopped
3/4 cup honey
1 1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt

Steps:

  • In a mixing bowl, cream butter and sugar.
  • Add eggs, bananas, apple and honey; mix well.
  • Combine dry ingredients; stir into creamed mixture just until moistened.
  • Fill paper-lined muffin cups two-thirds full.
  • Bake at 350 degrees F for 15-18 minutes or until muffins test done.
  • Cool in pan 10 minutes before removing to a wire rack.
