Banana Chocolate Chip Softies image

I make these cookies at Christmas time. They are usually gone before I can plate them. Chocolate and banana make a great combination. I found this recipe at cookierecipes.blogspot.com. I hope you enjoy them as much as we do!

2 1/2 c all purpose flour
2 Tbsp baking powder
1 Tbsp salt
2/3 c butter, melted
1/2 c brown sugar, lightly packed
2 bananas
2 eggs
2 Tbsp vanilla extract
1 1/2 c choc chips
1/2 c chopped nuts (optional)

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or use parchment paper. Sift together the flour, baking powder and salt. Set aside.
  • 2. In a medium bowl, cream together the butter and brown sugar. Beat in the banana and egg, then stir in the vanilla.
  • 3. Gradually stir in the dry ingredients until well blended. Fold in the chocolate chips and nuts (optional). Drop by rounded spoonfuls onto the prepared cookie sheet.
  • 4. Bake for 8 to 10 minutes, depending on your oven. Allow cookies to cool on baking sheet for 5 minuntes before removing to wire rack. Let them cool completely.
