Bananas Foster Crunch Mix image

Chex must have had a contest, and somehow it caught my attention, because I've queued up four new Nuts 'n Bolts recipes. This was one of the favorites -- it took less than a day for my work to eat it up. . .

Number Of Ingredients 9

3 c honey nut chex
3 c cinnamon chex
2 c pecan halves
1 1/2 c dried banana chips
1/3 c packed brown sugar
1/3 c butter
1/2 tsp ground cinnamon
1/2 tsp banana extract
1/2 tsp rum extract

Steps:

  • 1. In large microwavable bowl, mix cereals, pecans, and banana chips.
  • 2. In 2-cup microwavable measuring cup, microwave brown sugar, butter, and cinnamon, uncovered, on High, about 1-1/2 minutes, stirring after 1 minute, until melted and smooth. Stir in extracts. Pour over cereal mixture; stir until evenly coated.
  • 3. Microwave, uncovered, on High, 3 minutes, stirring after each minute. Spread on waxed paper or foil to cool; break into bite-sized pieces. Store in airtight container.
