A hearty way to start the day! This recipe is so simple and you probably have the ingredients already in the fridge. We tried this will little smokies, but can't wait to try other types of sausage. Each would add a slightly different flavor that I think would be fabulous. Make sure to let the potatoes get on the crunchy side......

Steps:
- 1. Fry hash browns in oil in a large skillet until they start to get soft.
- 2. Add onion, bell pepper and cook a while longer until potatoes begin to brown.
- 3. Slice the little smokies into small pieces and add to the skillet. When potatoes are browned, crack the eggs into the skillet. Stir mixture until eggs are cooked.
