- In a small bowl, dissolve espresso granules in boiling water. Stir in the egg, sugar, corn syrup, butter and vanilla until blended. Combine the flour, cocoa, baking powder and salt; stir into sugar mixture until blended. , Transfer to an 8-in. square baking dish coated with cooking spray. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean and brownies begin to pull away from sides of dish. Cool on a wire rack. , Sprinkle with confectioners' sugar. Cut into squares.
