I love to make this dish with leftover meatloaf from the night before. Using leftover meatloaf cuts some of the cook time, because I just have to reheat the meat. Plus it also helps with not wasting food. I have to make 2 baking dishes when any of my brothers are home.

Overall, these enchiladas were a success! They were easy to make and very flavorful. I would definitely recommend this recipe to others.

These enchiladas were a bit too cheesy for my taste. I think I would use less cheese next time.

I've made these enchiladas several times now and they are always a hit! I love that they are easy to make and can be tailored to my family's preferences. Sometimes I add black beans or corn to the filling, and sometimes I use a different type of chee

These enchiladas were a disappointment. The beef filling was bland and the enchilada sauce was too spicy. I would not recommend this recipe.

The enchiladas were good, but the beef filling was a bit dry. I think I would add more liquid to the filling next time. Otherwise, the flavor was great.

The beef enchiladas were delicious and easy to make. I used ground turkey instead of beef and they turned out great. The enchilada sauce was flavorful and the cheese was melted and gooey. I would definitely make these again.

These enchiladas were a hit with my family! The beef filling was flavorful and moist, and the enchilada sauce was creamy and cheesy. I loved the addition of the avocado and sour cream on top. Will definitely be making these again!
