BEET AND TOMATO SALAD image

Number Of Ingredients 9

1 lb. small beets
2 cups cherry tomatoes, halved
1/2 cup loosely packed mint leaves
1 teaspoon fennel seeds
1 teaspoon smoked paprika
1 teaspoon sesame seeds
salt and pepper to taste
3 tablespoons olive oil
Zest and juice of one medium lemon

Steps:

  • Preheat oen to 400 degrees. Wash the beets and wrap them with foil and bake for 1 hour and 15 minutes. Remove from the oven and let them cool. Gently remove the skin and thinly slice the beets. In a bowl, combine the beet slices and the rest of the ingredients and serve salad cold.
