Beet, Bean and Apple Salad image

This brightly colored cold salad is a perfect compliment to any meal or a zesty vegetarian meal in itself.

1 (8.25 ounce) can sliced beets, drained and diced
1 (15 ounce) can cut green beans, drained
1 large Granny Smith apple - peeled, cored and diced
1 teaspoon olive oil
2 tablespoons apple cider vinegar

Steps:

  • Combine the beets, green beans and apple in a serving bowl. Stir in olive oil and vinegar. Chill for 1 hour before serving. Serve cold.
