-phyllo pastry
-goat cheese
-cranberries: cooked, sweetened and spiced with a dash of Porto/ sherry
-melted butter (1/2 salted + 1/2 unsalted)

Steps:

  • Lay out 1 phyllo sheet. Brush w butter. Lay 2nd sheet. The pastry is thin and delicate. You need to work really fast or it will dry and crack. If it rips, simply keep working fast. While the rips seem dramatic initially, it doesn't matter. If it rips the additional layer will fortify it. Divide into 4 x 3 pieces to make 12. Place 1/4 piece of 1/2 inch chevre log onto each piece. Add 2-3 cranberries. Gather corners together and pinch closed. Place on a tray or in a box and freeze. When required, can be baked at 450F for 5 mins.
