2 Tbsp butter
2 Tbsp all-purpose flour
1 tsp salt
1 tsp sugar
1/4 c white onion, chopped
1 c sour cream
3 3/4 c fresh green beans, chopped
2 1/2 c shredded cheddar cheese
1 c butter crackers, crushed
1 Tbsp butter, melted

Steps:

  • 1. Pre-heat oven to 350F/175C. Melt 2 tablespoons butter in a large pan over medium heat.
  • 2. Stir in flour until smooth.
  • 3. Add and mix in the salt, sugar, onion, and sour cream.
  • 4. Add the green beans.
  • 5. Stir to coat well.
  • 6. Transfer the mixture to a 2 1/2 quart casserole dish.
  • 7. Spread shredded cheese over the top.
  • 8. In a small bowl, toss together cracker crumbs and the 1 tbsp melted butter.
  • 9. Sprinkle this over the cheese.
  • 10. Bake for 30-35 minutes or until golden brown and cheese is bubbly.
