BJ's Squash Casserole image

My mother loves this as well as I do. We ate this in a resturant and I kept searching ingredients until I came up with a similar recipe. It's good comfort food & I will be making this for our "Thanksgiving Dinner".

Number Of Ingredients 6

1 lb yellow squash
1 small white onion
1 (6 oz) box chicken stove top stuffing
1 (10oz) can(s) creamed soup (your choice of flavor) chicken, celery, etc.
1/2 c sour cream
1 1/2 c four cheese ( mexican blend)

Steps:

  • 1. Cook squash until tender, saute onion in sm. amt. of butter, then mix all ingredients together. Top with the four cheese (mexican blend). Bake @ 350 degree oven for 30 min. or until bubbly & brown.
  • 2. ** Just made a good recipe better....saute onion in (1/2) stick of butter & try using (1/2) box of chicken stove top stuffing. I also used the 2lb bag of Pic Sweet frozen squash or you can use fresh. I like more squash in my recipe.
