BLACK BEANS WITH PEPPERS, CAPERS, AND OLIVES image

Number Of Ingredients 14

2 Tbs. olive oil
1 large onion, finely chopped
2 cloves garlic, minced
2 tsp. cumin seeds
2 tsp. ground coriander
1/2 tsp. turmeric
1 tsp. tomato paste
1 large red bell pepper, diced
1 large green bell pepper, diced
1 large yellow bell pepper, diced
2 Tbs. bottled capers, draining not necessary
1/2 c. small stuffed green olives
2 15-oz. Cans black beans, drained and rinsed
1 c. chopped cilantro

Steps:

  • In a large, heavy-bottomed 2 quart pot sautee the onion and garlic on medium-low heat until soft. Add cumin, coriander, turmeric, and tomato paste. Add extra oil or water if the spices start to brown too quickly. Increase heat to medium; add peppers and sautee until soft. Add remaining ingredients and stir to combine and heat through. Can be eaten immediately or simmered on the stove for up to an hour.

This dish was a little too spicy for me, but I still enjoyed it. I would recommend using less chili powder if you don't like spicy food.
