Black Eyed Pea & Sausage Gumbo image

My husband is a picky eater and he loves this gumbo. I love it the flavor is great and lots of vegetables

Number Of Ingredients 12

1 medium onion ( chopped)
1 medium green bell pepper (chopped)
5 celery stalks (chopped)
2 clove garlic (minced)
1 lb andouille sausage (sliced 1/4 in)
1 can(s) 15 oz tomatoes (cut small)
2 can(s) black eyed peas (do not drain}
1 can(s) whole kernel corn
1/2 small bag frozen okra
1 Tbsp olive oil or your favorite oil
1 c rice (uncooked)
3 c chicken stock

Steps:

  • 1. Saute onion, bell pepper,celery in oil for 3-4 minutes and sausage and garlic cook 3-4 minutes more add remaining ingredients and simmer on medium-low heat 45 minutes.
  • 2. I like to serve with cornbread
