Steps:
- 1. Heat oven to 325 degrees.Grease and flour to 8 in layer pans.Beat egg whites until foamy. Beat in 1 cup of granulated sugar. 1 tsp at a time,continue beating until stiff and glossy. DO NOT underbeat. Set aside.
- 2. Measure shortening, 3/4 c.confectioner's sugar, egg yolks, and milk into a large mixer bowl. Blend 1/2 minute on low, scraping constantly. Add flour, baking powder and salt; beat 1 minute on medium, scraping bowl occassionaly, Spread in pans.
- 3. Spread 1/2 the meringue on batter in each pan; sprinkle each with 1/2 the almonds, then with 1 tablespoon granulated sugar.
- 4. Bake 35 to 40 minutes or until the meringue is set. Let cool.
- 5. With Spatula, carefully remove layers from pans. Fill layers, meringue side up, with pudding. Chill for at least 1 hour.
