3 cloves garlic
½ green bell pepper, quartered
2 stalks celery, cut into 2-inch pieces
2 tablespoons water
3 (15 ounce) cans red kidney beans, drained and rinsed
1 (15 ounce) can fire-roasted diced tomatoes
2 teaspoons hot sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon smoked paprika
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon cayenne pepper

Steps:

  • Heat a large nonstick pot over medium-high heat.
  • Place onion and garlic into a food processor and pulse on and off to mince. Add to the heated pan. Chop bell pepper finely in the processor and add to pan. Repeat with the celery.

1 tablespoon canola oil (or butter)
2 3/4 cups water
1 medium onion, diced
1 bell pepper, diced
3 stalks celery, diced
2 tablespoons canola oil (or butter)
1 lb smoked turkey sausage, sliced
1/2 teaspoon red cayenne pepper (or to taste)
1 teaspoon cajun seasoning
1 bay leaf
1 teaspoon minced garlic
1 can diced tomato
2 cans red beans (or kidney beans)
salt, pepper and hot sauce to taste

  • Heat 1 tbsp oil or butter in medium non-stick pan (that has a lid).
  • Add rice and stir in the hot oil until most of the kernels are opaque.
  • Add water and bring to a boil.

1 pound dried red beans
3 andouille sausage links
2 tablespoons butter
2 cups minced onions
1 cup minced green bell pepper
½ cup minced celery
4 bay leaves
1 slice ham steak, cubed, or more to taste
2 tablespoons Creole seasoning, divided
7 cups chicken broth
2 tablespoons chopped garlic
1 cup tomato sauce
2 teaspoons vinegar
½ cup chopped green onions, divided
2 tablespoons chopped fresh parsley
3 cups cooked rice, or to taste

Steps:

  • Place red beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain.
  • Heat a skillet over medium heat; cook sausage until cooked through, 10 to 15 minutes. Transfer sausage to a work surface and slice.
