Sometimes I'll boil one cup gemelli pasta (corkscrew) and toss it in with the other ingredients to "stretch" the salad for potlucks, picnics, etc. Marinating is necessary to allow the flavors to mingle.

2 medium red sweet bell peppers, roasted and skinned or 1 (7 ounce) jar roasted sweet red peppers, drained
4 cups cooked garbanzo beans (about 1 1/2 cups dry or equivalent canned beans, rinsed well and drained) or 2 cups cooked garbanzo beans and 2 cups kidney beans
1/2 cup sliced green onion
1/2 cup finely chopped celery
2 tablespoons capers, drained
1 -2 garlic clove, minced
3 tablespoons chopped of fresh mint, NOT dried
3 tablespoons olive oil (NO substitution)
3 tablespoons lemon juice (or 3 tablespoons combination of lemon juice and vinegar) or 3 tablespoons white wine vinegar (or 3 tablespoons combination of lemon juice and vinegar)
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
lettuce leaves (optional) or baby spinach leaves (optional)

Steps:

  • In a large non-reactive bowl combine vegetables, beans and capers.
  • In screw-top glass jar or glass measuring cup combine the remaining ingredients and shake or blend well.
  • Pour over bean mixture. Toss well to coat.
  • Cover and chill at least 4 hours.

16 new red potatoes
Coarse salt, for boiling water
1 red bell pepper, seeded and chopped
1/2 red onion, chopped
1/4 cup chopped fresh mint, a couple of handfuls
1/4 cup chopped flat-leaf parsley, a couple of handfuls
3 tablespoons red wine vinegar, eyeball the amount
1/3 cup extra virgin olive oil, eyeball the amount
Salt and freshly ground black pepper
1/2 pound fresh green beans, washed and cut into 1/3
2 rounded teaspoons Dijon mustard
2 teaspoons sugar
1/4 cup red wine vinegar, eyeball the amount
1/2 cup extra-virgin olive oil, eyeball the amount
1 (15-ounce) cans red kidney beans, rinsed and drained
1 (15-ounce) can garbanzo beans, rinsed and drained
1/4 cup flat-leaf parsley, chopped
Salt and freshly ground black pepper

Steps:

  • Place red potatoes in a pot and cover with water. Place pot on stove, cover and bring to a boil. Liberally salt water with coarse salt. Place a colander over boiling pot. Take your first ingredient from the bean salad, 1/2 pound cut fresh green beans, and place them in the colander. Cover the colander with pot lid. Steam beans 5 minutes while potatoes boil below. Remove beans and cold shock under running water. Drain green beans and set aside.
  • When the potatoes are just tender, about 12 minutes, remove from heat, turn off burner, drain potatoes and cold shock them under running water until just cool enough to handle. Coarsely chop potatoes and return them to the warm pot. Add peppers, onions, mint, parsley and vinegar to the pot. Toss to allow the vinegar to absorb into the potatoes. Add oil and stir the potatoes until they mash up a bit and salad has a spoonable consistency. Season with salt and pepper, to taste, and transfer to a serving bowl.
  • In a bowl, combine mustard, sugar and vinegar. Whisk in oil. Add kidney beans, garbanzo beans, green beans and parsley to the bowl and toss to coat bean salad evenly with dressing. Season salad with salt and pepper, to taste, and serve.

2 teaspoons salt
1 large red bell pepper
8 ounces green beans, trimmed, cut crosswise into thirds
1 lemon
1/2 cup black brine-cured olives (such as Kalamata)
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar

Steps:

  • Place dried beans in medium saucepan. Pour enough cold water over to cover beans by 3 inches. Let stand overnight.
  • Drain beans and return to same saucepan. Pour enough cold water over to cover beans by 3 inches. Bring to boil. Reduce heat; cover partially and simmer until tender, about 40 minutes. Add 2 teaspoons salt to beans and cool 15 minutes. Drain and cool beans.

  • Cook green beans in pot of boiling salted water just until tender, about 4 minutes. Drain beans; transfer to bowl of ice water and cool. Drain. Using vegetable peeler, remove peel from lemon in long strips. Cut into very thin strips.
  • Combine Great Northern beans, bell pepper, green beans, lemon peel and olives in large bowl. Mix in oil and both vinegars. Season with salt and pepper.

400g can cannellini beans
2 tbsp olive oil
2 tbsp lemon juice
1 tsp ground cumin
3 tomatoes , cut into eighths
10 medium radishes , finely sliced
6 spring onions , sliced diagonally
handful of fresh mint leaves
pitta bread , to serve
225ml low-fat yogurt
2 tbsp lemon juice
1 tbsp olive oil
1 garlic clove , crushed
