- Heat a Dutch oven over medium heat. Season the chuck roast with salt and pepper. Add the oil to the pot and sear the chuck roast until browned, 7 to 8 minutes. Remove from the pot. Add the ground beef and chorizo and cook until browned, 7 to 8 minutes; drain off excess fat if necessary. Add the garlic, onion and jalapeno and cook for 2 minutes, then return the chuck roast back to the pot with the beer, tomatoes and tomato paste.
- Using scissors, snip the guajillo chiles into small strips. Add to the pot and bring to a boil. Mix in the chili powder, cumin, oregano, bay leaves and 2 tablespoons salt. Reduce to a simmer and simmer for 1 1/2 hours.
- Remove the bay leaves. Add the beans to the pot. Combine the masa and 1/2 cup water in a small bowl, then stir the mixture into the pot. Continue to simmer until the chili thickens slightly, an additional 15 minutes.
- Serve with fixins: diced tomatoes, cubed avocado, grated Cheddar, sour cream, lime wedges and cilantro leaves.

- Heat a large stock pot over medium-high heat. Cook and stir beef until browned and crumbly, 10 to 15 minutes; drain and discard grease. Mix beer, tomato sauce, diced tomatoes, pinto beans, red beans, kidney beans, 2 chopped onions, green bell pepper, red bell pepper, brown sugar, garlic, chili seasoning mix, cornstarch, and mustard into ground beef; bring to a boil. I was in the mood for Chili but I couldn't find a good recipe that I liked. So I took some ideas and created this. =) OF course you can use half a jalepeno, or a chili, or use no pepper for a mild chili- but the jalepeno gives it a nice kick! Add more or less seasonings depending on taste 9 I can't really remember the exact measurements)

Steps:
- Brown The meat in a large skillet ( drain if desired- The fat gives it a better flavor).
- Once cooked through, add the onions, tomatoes, garlic, and a tablespoon of canola oil.
- Saute Until the Onions are slightly browned or colored by the tomatoes.
- Add the seasonings ( EXCEPT the bay leaves).
- Cook two minutes ensuring that everything is coated by the seasonings.
- In a large sauce or soup pot, pour the can of chicken broth inches.
- carefully remove the Browned meat mixture and gently pour into the canned broth.
- Set On Medium- High heat.
- Stir in the Jalepeno and Bay leaves and the two Tablespoons of Red Pepper Paste.
- Cover and let boil five to ten minutes.
- Turn down heat and cook for about 30 minutes ( depending on your stove, cooking times may vary).
- Side Note: While cooking taste the chili and add more seasonings if desired.
THREE BEAN SLOW BURN CHILI
I threw this together on a cold day when I was itching for some chili. The spice measurements are approximate. I start out with 1/8 cup and go from there. It cooks up fast and gets better when stored in the fridge and reheated. Top with shredded cheese and a dollop of sour cream, if desired. Enjoy!
