1 cup granulated sugar
8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
  • Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.

2 cups all-purpose flour
½ teaspoon baking soda
1 cup white sugar
1 egg
5 tablespoons milk
1 teaspoon baking powder
½ teaspoon salt
½ cup margarine
1 cup mashed bananas
½ cup chopped walnuts

Steps:

  • Sift together flour, baking soda, baking powder, and salt.
  • In a large bowl, cream sugar and butter or margarine. Beat the egg slightly, and mix into the creamed mixture with the bananas. Mix in sifted ingredients until just combined. Stir in milk and nuts. Spread batter into one greased and floured 9x5 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) until top is brown and cracks along the top.

  • In blender chop nuts for 10 seconds.

BOY OR GIRL BANANA BREAD

Very yummy recipe my mom gave me. Been using it for 20 years. I got a blue ribbon at the fair when I was in 4-H. Bread with nuts is boy banana bread and without nuts is girl banana bread, my kids don't get that yet but prefer the girl banana bread. Store all your old bananas in the peel in the freezer and when you need some for bread pull them out, thaw, cut the end off and they slide out and work great in breads and muffins.

8 tablespoons butter or 8 tablespoons margarine, at room temperature
3/4 cup sugar
2 eggs
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup whole wheat flour
3 large ripe bananas, mashed (I pull them from the freezer, thaw and use)
1 teaspoon vanilla
1/2 cup shelled walnuts, chopped (optional)

  • Cream butter & sugar till light & fluffy. Add eggs one at a time beating well after each addition.
