This recipe is from a Weight Watchers meeting. It is so quick -- I ate it daily when I was on maternity leave with my second son. If I am making it for the week, I just empty the cans into a plastic container and warm up 1 serving in the microwave. I have also made it using frozen corn and mixed vegetables. Tips:

  • Choose high-quality canned vegetables: Opt for brands that use fresh, whole vegetables and avoid those with added preservatives or excessive sodium.
  • Enhance flavor with fresh ingredients: Elevate the soup's taste by adding fresh vegetables like carrots, celery, and onions. Sautéing these aromatics before adding the canned goods deepens the flavor profile.
  • Don't be afraid to experiment with spices and herbs: A blend of herbs like thyme, rosemary, and oregano can transform a simple soup into a flavorful delight. Experiment with different combinations to find your favorites.
  • Add protein and healthy fats: Incorporate lean protein sources like beans, lentils, or shredded chicken to make the soup more filling and nutritious. A drizzle of olive oil or a dollop of Greek yogurt can add richness and healthy fats.
  • Customize the thickness: Adjust the soup's consistency to your preference. If you like a thicker soup, use an immersion blender to puree some of the vegetables. For a thinner soup, add more broth or water.
