2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
  • Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

8 ounces no-boil lasagna noodles
15 ounces part-skim ricotta cheese or 1 lb drained and mashed soft tofu
3 cups lightly steamed vegetables (any veggies ie broccoli, mushrooms...)
8 ounces part-skim mozzarella cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Spread a thin layer of sauce on the bottom of a 9"x13" casserole.
  • Cover with a layer of noodles (3 or 4 noodles should be enough).
  • Place ricotta in a bowl and add about 1/4 cup of water, stirring until blended.
  • Spread 1/3 of this mixture over the pasta (you can use a cake spatula).
  • Spread 1/3 of the remaining pasta sauce over the cheese.
  • Spread 1/3 of the vegetables over the sauce.
  • Sprinkle 1/3 of the mozzarella over the veggies.
  • Repeat twice starting with the noodles and ending with the mozzarella.

¾ onion, diced
5 (10 inch) flour tortillas
1 cup salsa
2 cups shredded Cheddar or Colby Jack cheese

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9-inch pie pan with non-stick cooking spray.
  • In a saucepan, cook refried beans and onions (to soften them) on medium-high heat for about 5 minutes.

1 medium onion,diced
1 envelope taco seasoning mix
3/4 cup water
12 small corn tortillas
1 cup black beans, drained and rinsed
1 cup canned corn, rinsed and drained
1 (4-ounce) can chopped green chiles, drained
2 (10-ounce) cans medium enchilada sauce
1 (8 ounce) carton sour cream (regular or nonfat
1 (16-ounce) can spicy or regular refried beans(regular or nonfat)
1 (8-ounce) package shredded Mexican cheese blend (regular or nonfat)

Steps:

  • Preheat the oven to 375°F (190 degrees C). In a large non stick skillet, add olive oil over medium heat , add onion and cooked until translucent, add turkey and brown, breaking it up into crumbles as it cooks, about 10 minutes. Stir in taco seasoning mix and water, bring the mixture to a boil, and reduce heat to low. Simmer turkey mixture until thickened, about 5 minutes. 1 cup sour cream (regular or low-fat)
1 cup shredded Monterey Jack cheese (regular or low-fat), divided
1 cup shredded Cheddar (regular or low-fat), divided
1/2 cup mild, medium or hot salsa
1 (4-ounce) can chopped green chiles
2 tablespoons chopped fresh cilantro leaves
1 teaspoon ground chili powder
1/4 teaspoon cayenne pepper, or to taste
8 (6-inch) corn tortillas, cut into 6 wedges

Steps:

  • Preheat oven to 350 degrees F.
  • Coat an 11 by 7-inch baking pan with cooking spray.
  • In a large bowl, combine chicken, sour cream, 3/4 cup of the Monterey Jack cheese, 3/4 cup of the Cheddar, salsa, chiles, cilantro, chili powder, and cayenne pepper. Mix well and set aside.

3 large roasted chickens
1 package(s) flour tortillas, medium sized
3-4 cup(s) sour cream
3 cup(s) mexican blend shredded cheese
1 cup(s) chunky salsa

Steps:

  • Start by preheating the oven to 375 Degrees. You will need a large casserole dish.
  • Get a large bowl to mix all ingredients well. Shred the roasted chickens and place in the bowl, also with the sour cream, cheese, and salsa.
  • Spray the casserole dish. Cut tortillas in half and then half cross wise to create 4 small triangles. Place the tortillas overlapping each other to form a layer.
  • Spread mixture in even layers and top with tortillas in between each layer like you would a lasagna. Top with lots of cheddar cheese and place in oven!

In skillet over medium-high heat, cook ground beef, crumbling with fork, until browned. Pour off any fat.
