Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Number Of Ingredients 7

1 cup crushed pineapple (drained with juice reserved)
1 cup water (more or less depending on what's needed, see instructions below)
2 packages lime jello (3 oz each)
1 cup mayo
1 cup evaporated milk (canned)
1 cup small curd cottage cheese
1/2 cup walnuts (chopped)

Steps:

  • In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
  • Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
  • In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
  • Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

2 small box lime gelatins, (3.4oz each)
2 cups boiling water
1 8 ounce package cream cheese, well softened and cubed
1 8 ounce can crushed pineapple, undrained
1/2 cup cold water
chopped pecans, for garnish (optional)

Steps:

  • Dissolve the gelatin in 2 cups boiling water, about 2 minutes. Vigorously whisk in the cream cheese until well blended. Small pieces may remain. Mix in the crushed pineapple (along with the juices) and 1/2 cup cold water. Pour into desired serving dish. Cover and refrigerate at least 2 hours, or until set. Garnish with pecans, if desired.

We now joke about making this jello months in advance (don't do it!!), because my Grandmother brought it for a family dinner and said she had made it weeks before - we could not eat it, but did not have the heart to tell her. It was the beginning signs of Alzheimer's :( for her. I hope she is not spinning in her grave since I am sharing this recipe. We miss her and think of her when we have this jello for Thanksgiving and Christmas.

2 1/4 cups water
3 (3 ounce) boxes lime gelatin
1 (20 ounce) can crushed pineapple
8 ounces brick cream cheese, softened
1/2 cup milk
1 cup chopped pecans

Steps:

  • Dissolve gelatin in 2 1/4 cup boiling water.
  • Drain pineapple and add 1/4 cup of the pineapple liquid to the gelatin mixture.
  • Add pineapple to gelatin.

3 ounces lime Jell-O gelatin
