A PEACH FOR THE PORCH

A Peach for the Porch image

Is there a better combo than a peach, a porch, and some port-finish bourbon? In this whiskey sour riff, an easy vanilla-honey syrup compliments the flavor of the whiskey and peach nectar.

Number Of Ingredients 9

Vanilla-Honey Syrup
¾ cup honey
1 vanilla bean, split, or 1 tsp. vanilla extract
Cocktail
1½ oz. Angel's Envy Port Finish Bourbon
½ oz. peach nectar
¾ oz. lemon juice
¾ oz. vanilla-honey syrup
Garnish: lemon wheel or frozen peach slice

Steps:

  • To make the Vanilla-Honey Syrup, add honey and ¾ cup water to a small saucepan over medium heat. Stir until honey is dissolved. Turn off heat, stir in vanilla bean or extract. Let cool to room temperature, then transfer (including vanilla bean if using) to a clean airtight container. Let chill overnight before using. Syrup will keep, refrigerated, for 2 weeks.
  • To make the cocktail, add bourbon, peach nectar, lemon juice, and Vanilla-Honey Syrup to a cocktail shaker. Fill with ice and shake until well chilled, about 15 seconds. Strain into a rocks glass over fresh ice. Garnish with lemon wheel or frozen peach slice.

Use this poached peaches recipe to make Individual Peach Tarts.

Provided by Martha Stewart

Yield Makes enough for 12 tarts

Number Of Ingredients 3

1 cup sugar
Juice of 1 lemon
3 firm ripe freestone peaches, halved and pitted

Steps:

  • In a medium saucepan, combine sugar and 2 cups water. Bring to a simmer over medium-high, and cook, stirring occasionally, until sugar has dissolved. Add lemon juice and peaches. Simmer until peaches are tender when pierced with the tip of a knife, about 10 minutes. Remove saucepan from heat, and let peaches cool in the poaching liquid. Using a slotted spoon, remove peaches from poaching liquid, peel, discarding skins. Slice peach halves into 6 wedges each. Transfer peaches and poaching liquid to a bowl. Cover; refrigerate until chilled.

Tips:

  • Choose the ripest peaches: Look for peaches that have a deep, golden-orange color and give slightly when gently squeezed.
  • Prepare the peaches properly: Before using, wash the peaches thoroughly and remove any blemishes. For most recipes, you'll also need to peel and slice the peaches.
  • Don't overcook the peaches: Peaches are best when they retain their shape and texture, so avoid cooking them for too long.
  • Pair peaches with complementary flavors: Peaches pair well with a variety of flavors, including berries, citrus fruits, herbs, and spices. Get creative and experiment to find your favorite combinations!

Conclusion:

Peaches are a versatile fruit that can be enjoyed in many different ways. From sweet and juicy desserts to savory main courses, there's a peach recipe out there for everyone. So next time you're looking for a delicious and refreshing way to use up your summer peaches, give one of these recipes a try!
