3 large boneless skinless chicken breasts
2 tablespoons fresh lemon juice
1 cup plain yogurt
1 tablespoon pressed garlic
1 tablespoon freshly grated ginger
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
2 1/2 tablespoons cayenne pepper
1/3 teaspoon salt
1/3 teaspoon fresh ground black pepper
melted butter or olive oil, for brushing
lime, for serving

Steps:

  • Clean your chicken, and cut it into cubes for threading on skewers.
  • Take a fork and prick the chicken many times.
  • Put lemon juice in bowl with chicken, stir well, and set it aside.
  • In a large bowl, mix yogurt, garlic, ginger, cumin, turmeric, cayenne, salt and pepper.
  • Place the chicken in the bowl with the marinade, and marinate for at least 2 hours, preferably 4-6 hours.
  • Thread chicken onto skewers.
  • Heat your grill with a nice flame and place chicken skewers on the grill.
  • Brush with butter or olive oil, and grill approximately 6 minutes on each side, or until done, having nice grill/char markiings.
  • Once you have grilled one side for 6 minutes, turn them over and brush with butter or olive oil, and grill 6 more minutes or until done.
  • Serve with lime wedges on the side for squirting on chicken pieces; YUM!

boneless skinless chicken thighs or boneless skinless chicken breast
2 teaspoons curry powder
4 garlic cloves, finely chopped
1 inch fresh ginger, finely chopped
2 tablespoons tomato paste
2 tablespoons lemon juice
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 teaspoon paprika
2 cups plain natural yoghurt

Steps:

  • Mix all but chicken together in bowl, refrigerate overnight.
  • Add chicken, cut in 1 1/2 inch cubes to marinate in afore-mentioned bowl, cover and refrigerate at least 4 hours.

1 1/2 lbs chicken breasts
3 -4 tablespoons yogurt
1 clove garlic, crushed
1 1/2 teaspoons fresh grated ginger
1 small grated onion
1/2-1 teaspoon chili powder, to taste
1 tablespoon ground coriander
2 tablespoons tomato paste
salt
melted butter, for basting (optional)

Steps:

  • Cut the chicken breasts in long strips or cubes.

Hariyali Chicken literally means Green Chicken. Breast tenders are rubbed with an intoxicating paste made with cilantro, mint, and other distinctive flavors and grilled to perfection.

5 garlic cloves
1 green chili pepper
2 cups cilantro leaves
4 cups mint leaves
1 tablespoon cumin powder
1/2 green bell pepper
1 scallion (use the white and light green part only)
1 tablespoon vegetables or 1 tablespoon canola oil, and more for grilling
4 chicken breasts (chicken tenders)
kosher salt
fresh lemon juice

Steps:

  • In a food processor/blender, mix cilantro leaves, mint leaves, scallion, bell pepper, cumin powder, green chili and garlic cloves.
  • Add oil to the above mixture and blend to form a smooth paste.
  • Remove the prepared green mixture in to a zip lock bag along with the chicken tenders.
  • Seal the bag and massage the marinade in to the chicken tenders. Place this bag in the refrigerator overnight or for at least ten hours.
  • Use skewers to place the marinated chicken tenders. Sprinkle salt on each side of them.
  • Heat the grill and rub it with some oil. Place the skewers on it to get grill marks on each side and cook until the chicken is done.
  • Drizzle some fresh lemon juice and enjoy with your favorite dipping sauce and loved ones!
