This homemade hot and sour soup (tom yum) is easier than most recipes you will find. I have simplified a sometimes complex recipe for those like me who can have a hard time finding some of the original ingredients. This is my favorite recipe, better than any tom yum in the many restaurants I have been to.

4 cups vegetable broth
1 pound raw shrimp, unpeeled and deveined
4 limes, juiced with pulp
4 Thai chile peppers, quartered
2 stalks lemongrass, quartered
2 tablespoons tom yum paste
1 ½ tablespoons fish sauce
1 tablespoon white sugar
1 tablespoon chile sauce
4 (1/4 inch thick) slices fresh ginger root
6 baby bella mushrooms, sliced
2 green onions, thinly sliced

Steps:

  • Combine vegetable broth and shrimp in a pot over medium-high heat. Bring to a low boil for 10 minutes, then lower heat and simmer for 10 minutes. Remove shrimp from the broth and remove and discard shells; set shrimp aside.
  • Add lime juice, lime pulp, chile peppers, lemon grass, tom yum paste, fish sauce, sugar, chile sauce, and ginger slices to the broth; cook for 10 minutes. Remove chile peppers, lemongrass, and ginger slices with a slotted spoon and discard. Add cooked shrimp and remove from the heat.
  • Ladle soup into bowls and top with mushroom slices and green onions.

½ pound medium shrimp - peeled and deveined
12 mushrooms, halved
1 (4.5 ounce) can mushrooms, drained
4 cups water
2 lemon grass
4 kaffir lime leaves
4 slices galangal
4 chile padi (bird's eye chiles)
1 ½ tablespoons fish sauce
1 ½ limes, juiced
1 teaspoon white sugar
1 teaspoon hot chile paste
1 tablespoon tom yum soup paste

Steps:

  • Trim lemongrass and cut into matchstick size pieces.
  • To make stock: Add the shrimp heads and shells to water, then cook for 20 minutes. Turn the fire off. Soak the heads and shells for further 20 minutes before discarding.

12 king prawns, chopped
1 large chicken breast fillet, finely chopped
1/4 bunch celery, finely sliced
4 spring onions, finely sliced
6 small mushrooms, finely sliced
1/4 cabbage, finely sliced
2 tablespoons fresh grated ginger
1 tablespoon sesame oil
1/2 cup soy sauce
1 liter campbells vegetable stock
500 ml campbells real chicken consomme
1 liter water
4 bunches egg pasta vermicelli
1 tablespoon salt
1 tablespoon pepper
2 tablespoons oil

Steps:

  • In a heavy based pan put prawns, chicken and all the veg; stir fry for 5 minutes in cooking oil. Add ginger and continue to stir fry for 2 minutes.
  • Add liquid stocks and water, stir.
  • Add sesame oil and soy sauce, salt and pepper.
  • Stir well, bring to the boil and gently simmer for 10 minutes.
  • Add egg noodles and simmer for another 30 minutes, stirring every 5 minutes.
  • Don't let this soup boil.

4 coriander roots (scraped)
4 stalks lemongrass, white parts only
1 teaspoon asafoetida powder (yellow)
2 small fresh hot red chili peppers, chopped
4 kaffir lime leaves
4 large ripe tomatoes, blanched, peeled and coarsely chopped
1 1/2 cups mushrooms, chopped coarsely
400 g tofu, firm pressed, cut into 2 . 5cm pieces
1 bunch sorrel, torn
2 small hot red chili peppers, extra, sliced diagonally
5 tablespoons soy sauce
1/2 cup lime juice
2/3 cup fresh coriander leaves, chopped
4 liters water
1 cup carrot, sliced
1 cup cabbage, sliced
1 cup white radish, sliced
1 1/2 teaspoons salt

Steps:

  • Combine 4 litres water; 1 cup carrots, sliced; 1 cup cabbage, sliced; 1/2 cup celery stalks, sliced; 1 cup white radish, sliced; and 1.5 tsp salt in a saucepan and boil for 1 hour, or until the liquid has reduced by half.
  • Strain, and set aside.
  • Pound the coriander roots, lemongrass, asafetida and chili to a rough paste using mortar and pestle. Alternatively, process in a blender with a few drops of water.
  • Boil the vegetable stock in a saucepan over full heat. Drop in the kaffir lime leaves, mushroom, and tomato and cook for 2 or 3 minutes.
  • Add the spice paste, reduce the heat to a simmer, add the tofu and sorrel and cook for another 2 minutes.
  • Serve: Divide the extra chili, the soy sauce, lime juice and chopped coriander into large deep serving bowls and pour the boiling soup over. Serve with hot steamed rice.
