3/4 cup milk
1/2 cup butter
1/2 cup sugar
5-1/4 to 6 cups all-purpose flour
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3 eggs
3 medium ripe bananas, mashed
1 teaspoon water

  • In a large saucepan, cook and stir the milk, butter and sugar over medium heat until butter is melted; cool to 120°-130°. In a large bowl, combine 2 cups of flour, yeast, salt, 2 eggs, bananas and milk mixture; beat on low speed until combined. Beat on medium for 3 minutes. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes. Place in a greased bowl, turning once to grease top. You will need to "babysit" it for the mixing cycle as the moisture of bananas can vary greatly and you may need to add more flour or water if the moisture content needs adjusting. The prep time includes the babysitting of your dough ball - the cook time is the full bread machine cycle.

3 overripe bananas
1/4 cup molasses
2 tablespoons butter
3 cups white bread flour
1/2 cup white bread flour, to adjust moisture content
1/3 cup powdered milk
3/4 teaspoon salt
2 1/4 teaspoons active dry yeast
cinnamon (optional) or spices (optional)

Steps:

  • Layer ingredients in machine in the order listed or as per your machines instructions.

I found this recipe on allrecipes.com and wanted to post it here for safe keeping. This is the best thing that has ever come out of my bread machine! A light fluffy tasty bread that my family gobbled up and asked for more! Remove your predetermined ideas of banana bread and try this yeast bread, the banana flavor is very subtle, but I think it adds to the nice texture. I am posting the recipe as I found it, but be warned I had to reduce the amount of yeast I used because when i used it with the full 2 1/2 teaspoons the dough spilled over the top of my ABM. I had better results with 2 tsp.
