Tips:

  • To achieve the best flavor, marinate the pork loin for at least 8 hours, or overnight.
  • If you don't have annatto paste, you can substitute achiote powder. Just mix 1 tablespoon of achiote powder with 1/4 cup of warm water to create a paste.
  • To make the pulled pork tamales, be sure to use fresh masa harina. This will give the tamales a light and fluffy texture.
  • If you don't have a steamer, you can cook the tamales in a pot of boiling water. Just be sure to keep the water level below the tamales so that they don't get soggy.
  • The hoisin-key lime syrup is a great way to add a sweet and tangy flavor to the pulled pork. If you don't have hoisin sauce, you can substitute a mixture of soy sauce and brown sugar.

Conclusion:

This achiote-marinated pork loin with pulled pork tamales and hoisin-key lime syrup is a delicious and flavorful dish that is perfect for a special occasion. The pork loin is tender and juicy, the tamales are light and fluffy, and the hoisin-key lime syrup adds a sweet and tangy flavor that brings the whole dish together.
